All of our albacore tuna is caught by pioneer fisher Paul Hill, and is sashimi grade. This young, 4- year-old tuna is super healthy, having more omega-3 fatty acids than most salmon. Our ventresca is the belly meat of our albacore, separated from our medallions and canned. It is richer in omega-3 fatty acids than medallions, and has a rich flavor suitable for special uses such as hors d’oeuvres. This is a perfect party food.
