Our coho salmon portions have really good color, medium texture and flake, and a nice clean flavor. It’s a staple on our local restaurant menus. Wild-caught by Tribal fishers, who follow our strict guidelines for live-bleeding and slush icing. We follow them out to the fishing grounds, and load the slush iced totes aboard our tender for immediate delivery, so they can be flash frozen fresh. Our wild coho / silver salmon portions are a good alternative to sockeye, and at a lower price.
Also known as silver salmon, cohos have a red-orange color, with a traditional rich salmon flavor. Cohos eat other fish as well as zooplankton, and have a slightly stronger salmon flavor than sockeye salmon. An excellent choice for grilling, broiling, sautéing, baking, poaching, steaming, and smoking.
