All of our Dungeness crab is delivered fully cooked and frozen. Once thawed, it’s ready to enjoy chilled or warmed. If you’re working with a whole crab, here’s how to clean and portion it at home:
Step 1: Rinse – Rinse the thawed crab under cold water to remove any surface ice, debris, and to refresh the meat.
Step 2: Reheat (Optional) – If you prefer to serve your crab warm, place the whole crab in a large pot of unsalted, boiling water for about 4 minutes. This will heat it through without overcooking the meat.
Step 3: Remove the Shell – Hold the crab firmly and lift the top shell (carapace) away from the body. Some liquid may spill out — this is normal. Discard the shell or reserve it for making seafood stock.
Step 4: Clean the Interior – Remove and discard the gills (also called “dead man’s fingers,” which are inedible) and any internal organs. Rinse the crab again under cold water to remove any remaining bits.
Step 5: Split the Body – Flip the crab belly side up and remove the small triangular apron on the underside. Turn the crab back over and split the body in half using your hands or a large knife.
Step 6: Crack the Legs & Claws – Use a seafood cracker or the back of a heavy knife to gently crack the shell segments. This makes it easier to access the meat.
Once cleaned, serve your crab with drawn butter and fresh lemon, or flake the meat into your favorite recipes — from crab rolls and chowder to pastas and salads.
