Smoked salmon requires an additional process, which includes both ingredients and time. Adding the smoking process increases our costs to produce the fish, which means our smoked salmon price will be slightly higher.
However, and perhaps more importantly, salmon loses mass during the smoking process. Researchers estimate that a salmon portion will lose between 16% and 18% of its weight once it is salted and smoked. This means consumers are often getting the same cut of salmon for roughly the same price, whether it’s smoked or unsmoked.
