Handling Instructions – Weathervane Scallops
The Weathervane scallops delivered from Lummi Island Wild are frozen together in one solid 1.25 lb block. They are then sawed while still frozen into smaller 6 oz blocks to retain the highest quality and naturally fresh flavor of the scallops. Because of this method, each package contains 8-12 whole scallops and some cut pieces. If you want to enjoy the scallops when they arrive, let them thaw before cooking. If you prefer to wait, they will remain good to eat in your freezer for up to three months.
