These wild, Ivory King salmon are a rare and special treat. The same great quality and rich taste of the “red” king, but with a slight color that varies between red and ivory. While nutritionally identical to red kings, ivory kings tend to contain more oil, resulting in a buttery and lavish flavor. These fish are delicious and can handle high heat due to their high omega-3 fat content. Grill, broil, or sear until tender and flaky, no additional butter needed, serve with sauteed vegetables and wild rice for a complete and decadent meal.
The curious genetic twist that determines the pigmentation is highly unpredictable. So red, white, and marbled salmon all swim in the same school, and until they’re filleted, no one can tell which color they might be. This anomaly only occurs in about 10% of wild-caught Kings in the Pacific Northwest. Marbled and Ivory king salmon account for only a fraction of the annual catch and have the same high omega 3 content, and the clean taste that connoisseurs of wild salmon appreciate.
Orca Safe Salmon means the fish you are eating has been caught in a terminal area, meaning close to the salmon’s river of origin, well past the point that a fish might make a meal for an Orca. Orca Safe Salmon also means the fish you are eating has been caught by sustainable gear with little or no by-catch, in a fishery carefully controlled by Tribal, Federal and/or State fisheries managers.
WILD KING SALMON PREPARATION TIPS
As one of the more decadent salmon types, king salmon doesn’t require a lot of effort in the kitchen. The fish’s natural flavor and texture are enough to stand out as a main course. That said, we prefer our king salmon grilled on a cedar plank with a sprinkling of sea salt. To finish squeeze some fresh lemon juice onto the skin with a few twists of freshly ground black pepper. When buying wild king salmon online, we recommend a simple preparation to better experience the fish’s flavor.
HANDLING INSTRUCTIONS – WILD KING SALMON
If you buy wild king salmon online from Lummi Island Wild, expect to receive a delivery of frozen, not thawed, fish. All of our king salmon ships frozen in order to preserve the fish’s delicate taste and texture. Once the package is received, you can either begin to defrost your king salmon portions for dinner that evening or keep them frozen for a later meal. King salmon has a higher oil content than other types of fish, which means it can spoil faster. That said, you can store it in your home freezer for up to three months.
