Our wild king salmon portions have a rich buttery fresh flavor, nice flake and nice finish. Clean tasting because every fish is individually handled, immediately slush iced, and custom processed. These kings are caught by tribal fishers near Samish Bay, who live bleed and slush ice them for us. By working the waters with local independent fishers who respect both salmon and our environment, we can ensure the highest quality wild kings available.
Also known as chinook, tyee, or blackmouth, this salmon is prized for its high oil content, firm texture and rich flavor. The color of the flesh can range from deep red to white, or “ivory” -which is found in about 10% of kings. King salmon have consistently won blind taste tests among salmon aficionados. Kings are the largest of the species with their average weight in the Salish Sea being 15-20 lbs. Its high oil content makes it a prime candidate for grilling, broiling, sautéing, baking, poaching, steaming, and smoking.
