Description
These wild, marbled King salmon are a rare and special treat. The same great quality and rich taste of the “red” king, but with a slight color that varies between red and ivory. Marbled and Ivory king salmon account for only a fraction of the annual catch and have the same high omega 3 content, and the clean taste that connoisseurs of wild salmon appreciate.
The curious genetic twist that determines the pigmentation is highly unpredictable. So red, white, and marbled salmon all swim in the same school, and until they’re filleted, no one can tell which color they might be. This anomaly only occurs in about 10% of wild-caught Kings in the Pacific Northwest.
Marbled King salmon is very similar to the red King salmon, with some shades of red running through it, they have a rich and buttery flavor with soft-textured flakes and a velvety finish. These fish are locally, wild-caught by Salish Sea fishers.
